How can I customize this color palette? I want to choose the colors for each category to be more meaningful, but I can't figure out how to either create an in-line scheme or a custom scheme (which would probably be better, so I can share it across the notebook).

Yes it does :) You can replace the name of the color scheme with a list of colors, like I did there… the domain and range values are matched up, so you can list them in any order

I've got the cheatsheets and the Plot GitHub page open, and I've looked at the examples. I think the answers might all be there. It's also a matter of trying to untangle the relationships among the different pieces, too. I don't have it loaded in my brain why fill is specified in barX.groupY.y, but color is an argument to the constructor. In retrospect, the schema makes sense, but it's very hard for me to intuit it.  

Another one was figuring out what the heck a cell is in relationship to JS. I found that article, which was super helpful. It isn't too relevant for what's on the page now, but I was trying to get from DuckDB.query to a JS array of strings. So many stumbling blocks along the way there, but now I've got it in my head about using code blocks and return calls, how cells implicitly await, and queries returning promises.

Yeah cells and reactive code take a bit of getting used to, but it's usually easiest to break things up into individual cells and not deal with promises directly
