I'm confused about the conversion coefficients of 0.63 for cocoa powder, which means 1kg of cocoa powder would have been produced out of 630 grams of beans? I assume the idea here is that the factor 1.72 for cocoa butter compensates the 0.63 for powder, but butter/powder are generally assumed to be more or less equal parts of paste. Tried finding the FAO source on conversion coefficients but couldn't find anything that included the numbers in this table. Could you share this please?
